What is a Garlic Scape?
"Garlic scapes are the flower stalks of the finest hardneck garlic varieties, curl upwards as they grow, ultimately straighten, and then grow little seedlike bulbs. When the garlic scapes are in full curl they are tender and delicious" *with a pronounced raw garlic flavour.
For those who find the "raw" flavour too strong, a quick saute in butter or oil softens the flavour.

- zap it up in the blender & eat!
- reat with pasta, crackers, brie etc...
- quick saute of scapes to mellow raw garlic flavour

Sprucedale Meats Smoked Bacon

garlic scapes, cut to 1/4 inch lengths

large eggs

| 1/4 tsp |
kosher salt |
| 1/4 tsp |
red pepper flakes |
| 1/2 cup |
freshly grated romano or grana padana cheese |
- cook pasta according to instructions (I prefer Barilla brand pasta)
- while pasta cooks, brown bacon over medium heat. Remove when done, and add scapes to pan. Cook until soft (2-3min). Remove from pan with slotted spoon and drain with bacon on paper towel.
- Whisk together eggs, chile flakes & salt.
- When pasta is done, drain it then return to pan. Set on different burner, set to low or turn down gas to low. Stir in scapes and bacon then add egg mixture stirring until sauce is thick and creamy (3-4 min) Do not overcook. Sprinkle in cheese, a little at at time and stir to combine until all the cheese is blended in.
- Serve immediately, with crusty Windmill bakery bread and fresh cgarden salad
